Zucchini Pancakes with Blueberry Syrup

If you've ever planted zucchini, you know that you usually have more than you know what to do with. Our situation was no different, which is why we still have grated zucchini stacked in Ziploc bags in our freezer from last September.

If you've read my last few recipes, you'll know that I've been browsing through my Vita-Mix cookbook, and was thrilled to come across this recipe. Not only did it use a full bag of zucchini, (I tripled the recipe), it called for whole wheat, my favorite grain of all time.

And because I remember that my daughter had been sneaking frozen blueberries the night before, I knew we still had some left from our last trip to Sam's, so I whipped up a batch of blueberry syrup...

This was my favorite part of the meal, and the meal was lunch, because we don't have boundaries for when we serve pancakes...

    About the recipe cards - they are set up a neat way. But I thought you'd want to know (do I sound like the family "tattleler"? o;-p) when I clicked to save the syrup recipe, my computer told me it was blocking a spam type of pop up.

    Is the reason your daughter has her pancakes all shredded on one side of her plate and dipping them in the syrup on the other side of the plate, due to that being how your suppose to eat them at lunch time? As in, you can't pour syrup over the whole top of one except at breakfast .... ;-p

    It also appears as though she is trying to protect her plate from the incomming fork of a sibling.

    And lastly, was this 'red' day at your house? As in, everybody had to wear something red?

  4. Just finished cleaning up after serving this delicious breakfast to my girls. Very yummy!

    But if you want a raw syrup, I definitely recommend thawing the frozen blueberries before adding the honey. Otherwise, your blender's contents become nothing more than a frozen lump of honey-coated blueberries. Why did I not realize this BEFORE putting it in my blender?!? : )

    I didn't realize you had this new site...great job! I just subscribed, love the idea of whole foods for kids (I'll be on the look out for new vegan/vegetarian recipes from you!)

    I use freshly ground flour that is red/white whole wheat, eggs from our chickens, evaporated cane juice and everything is always organic!

  6. Cheryl, yes the photo was the stack of 8 pancakes was staged, but the 18-year-old boy did indeed eat that many! And no, it wasn't red day....just a coincidence!

  10. I'll make them but must modify them. Substituting flax for the eggs and almond milk for the dairy milk, I think the product will be great. Plus, I have bees and love recipes that utilized my zillions of lbs. of honey. Thanks for the great pics.

  11. Ginger, yes, I have had good success making vegan pancakes with other recipes, so I'm sure that would work well. It's cool that you have bees! Perhaps that is something I need to look into!

  13. I NEVER would've thought of zuchini pancakes, but I love zuchini bread and muffins, etc... so why wouldn't they be awesome as well?
    I am defintiely keeping this in mind this summer for when the inevitable zuchini overflow begins!

  14. We make these nearly every weekend. I make them with a gluten-free flour blend and freshly-ground flax flour (i.e. flax seeds whirred to a flour in my coffee grinder!). The batter tends to be too thick for my liking, so I thin it with extra milk -- this leaves us with lots of pancakes, which I freeze to use throughout the week. It makes our mornings so much easier!
