Pink Fruit and Veggie Popsicles

As promised, I am blogging a second attempt at fruit and veggie Popsicles (And just for your info, I didn't know that the word "Popsicle" was capitalized, but that is what my spell-checker tells me.) These were just as good as the Orange fruit and veggie Popsicles, but because my boys don't have any pink clothes or props, I used my 8-year-old daughter as the model...

So have you thought of any fun fruit and veggie combos to make pretty Popsicles? I thought of a new one today....a Brown Popsicle, using cocoa powder and green leaf lettuce or spinach. Probably replacing the water with milk would be a good idea, too. Let me know if you come up with any other color combinations and I hope your kids enjoy these, too!

Pink Fruit and Veggie Popsicles

A delicious pink Popsicle made with strawberries and zucchini!

Ingredients:
1 cup water
1 cup peeled, shredded zucchini
1 cup fresh or frozen strawberries
1/4 cup honey
1 teaspoon vanilla
Pinch salt

Directions:
Mix all ingredients in a blender (I love the Vita-Mix) and blend until smooth. Pour into Popsicle makers, then freeze for at least four hours, or until completely frozen. To remove from Popsicle makers, run cool water over them for a few seconds.

  1. Thank you for all your great recipes. I especially love the idea of these Popsicles. I don't have a turbo blender just yet, so I have to freeze the fruit and then food process it in order to accomplish what I want to, but inspired by your Popsicles, I am going to try a spinach, honey dew, kiwi pear ice cream pop. I will add some vanilla soy milk to make it creamy. I am way excited to try it once the fruit is frozen enough for me to whip it up. Thanks again for this blog. I love it and thanks for letting me know to capitalize Popsicle. Who knew?

  5. Awesome! Another way to use zucchini! I once made a dessert pizza for my son's birthday and used zucchini instead of apples. Nobody knew the difference!
    I'm going to have to find some popsicle molds now!

  9. I tried these yesterday and they are AWESOME! Easy to make and tasty! I've thought of making something similar with juice but they always turn out rock hard...I never thought of just grinding it all up...that really keeps a nice texture! (Now I know what to do with leftover smoothies!) Thanks!

  11. I have 2 sets of Tupperware molds and this Senior Citizen makes fruit Popsicles. I have my eye on that $50 Zoku maker at Williams Sonoma. Make 9 before you have to refreeze.

    My zucchini is loaded with blooms so I will have plenty; add coconut milk, a little Splenda, and kiwi. Yes, instead of smoothies, freeze it for Popsicles. Blueberry and spinach with a little vanilla?
