Salad for Toddlers

Getting toddlers to eat salad isn't always the easiest task to accomplish, but here's something you might want to try.

Cut the greens and other vegetables into tiny pieces, then mix with your favorite whole foods dressing, such as The Pioneer Woman's Homemade Ranch Dressing recipe.

This ensures that each salad bite is dressed and I've noticed that toddlers enjoy a salad more this way. Top with croutons and you're set!

Ingredients

* Greens, cut up into ½ inch pieces
* Other vegetables, cut up into ½ inch pieces
* Salad dressing
* Croutons

Directions

1. Combine all vegetables in a bowl.

2. Pour on salad dressing and mix well with vegetables.

3. Top with croutons.

Kids love eating salad that is dressed in each bite!

Spring Rolls

I copied and pasted this post directly from my homemaking blog because I just had to share it with you. Also, it's not completely created from whole foods, as the recipe calls for white rice paper and noodles. However, spring rolls are still really, really good for you and my kids just LOVED them!

To make spring rolls, you first go to the Asian market, which happens to be across town, but you get detoured because your brother is with you and wants to take the kids to the pet store...

Okay, NOW you go to the Asian store. You wait a really long time in the car for your brother and 15-year-old daughter because you don't want to take the other six kids in. You wait patiently...

So do the kids...

Your brother finally comes out, and you have to take his picture because he just looks so ridiculous, on purpose...

You go home and he starts making the peanut sauce...

He tries to get you to try some, and you do, and it's really, really good...

He gets tired of you taking pictures and he says, "Why don't you put your camera down and help by snapping these?"

....while he and your 15-year-old daughter thinly slice and mince all manner of vegetables and herbs, including asparagus, cucumbers, carrots, snap peas, spinach, alfalfa, and cilantro...,

They then saute shrimp in butter...,

...cook the rice noodles in boiling water according to the manufacturer's instructions...,

...dip rice paper into boiling water, then immediately roll it into spring rolls. Aren't they lovely?...
