Salad for Toddlers

Getting toddlers to eat salad isn't always the easiest task to accomplish, but here's something you might want to try.

Cut the greens and other vegetables into tiny pieces, then mix with your favorite whole foods dressing, such as The Pioneer Woman's Homemade Ranch Dressing recipe.

This ensures that each salad bite is dressed and I've noticed that toddlers enjoy a salad more this way. Top with croutons and you're set!

Ingredients

* Greens, cut up into ½ inch pieces
* Other vegetables, cut up into ½ inch pieces
* Salad dressing
* Croutons

Directions

1. Combine all vegetables in a bowl.

2. Pour on salad dressing and mix well with vegetables.

3. Top with croutons.

Kids love eating salad that is dressed in each bite!

Purple Fruit and Veggie Popsicles

I really, really, really just can't get enough of fruit and veggies Popsicles. We made these with lettuce...

...added some sweetener, vanilla, and salt, poured the mix in Popsicle makers...

Purple Fruit and Veggie Popsicles

A Popsicle made from lettuce and blueberries!

Ingredients

* 2 cups water
* 2 cups blueberries, fresh, or frozen and thawed
* 2 cups lettuce
* ½ cup honey
* 1 teaspoon vanilla
* ⅛ teaspoon salt

Directions

Blend all ingredients in a blender, pour into Popsicle molds, and freeze for at least four hours, or until completely solid.
